From the land to the table

The Uva Restaurant and Wine Bar focuses on local products and uncomplicated food, with a strong connection to Madeira's terroir.

On the terrace of The Vine hotel in Funchal, Uva restaurant is a true observation point for the city of Funchal. It offers panoramic views and allows guests to dine either indoors or outdoors. Its name means “grape” and has to do with wine, as does the entire theme of the hotel. The inspiration is Mediterranean, with a strong French influence, related to the origins of the chef, Thomas Faudry.

The restaurant has entered a new phase. A revamped menu tests new ingredients, but the connection to the terroir remains, using as many local products as possible. It is a “farm-to-table” concept, explains Thomas Faudry. Added to this is the philosophy behind the plating and organization of the menu, which is based on the idea that “people want more freedom and fewer concepts, less exuberance,” explains the chef.

At Uva Restaurant and Wine Bar, there are two tasting menus. One of them, consisting of three courses, is called Sabores do Campo ao Mar (Flavours from the Countryside to the Sea), with a choice of fish or meat for the main course. The other consists of four courses and is called Terroir. Both offer pairing options with drinks, mainly Portuguese wines, but also Madeira cider.

Outside of the tasting menus, all dishes can be ordered à la carte. The menu is not extensive, but it is comprehensive and also includes a range of vegetarian options and choices for children. The meal always begins with naturally leavened bread and a tomato and olive focaccia, made in the restaurant's own kitchen and served with a laurel butter, also produced in-house. For dessert, in addition to sweets, there is a selection of Portuguese cheeses.

The wine list covers all Portuguese regions and has a strong focus on Madeira wines, both the most renowned fortified wines and the lesser-known still wines. All can be drunk by the glass. The restaurant also has a corkage service, which allows customers to bring their own bottle to be served with dinner.

The service is relaxed and informal. The team is young and committed, and the contemporary atmosphere of the dining room or terrace adds to this feeling.
