Chef with MICHELIN Background Cooks in Funchal

On May 9, Jacob Jan Boerma Headlines Exclusive Dinner at Il Gallo d’Oro

The restaurant Il Gallo d’Oro, awarded two MICHELIN stars and located within The Cliff Bay, is set to welcome one of Europe’s most prestigious names in haute cuisine. On May 9, Dutch chef Jacob Jan Boerma will headline an exclusive dinner alongside resident chef Benoît Sinthon, in an experience that quickly sold out.

The event reinforces Il Gallo d’Oro’s position as one of Madeira’s leading gastronomic references, establishing itself as a stage for signature culinary experiences with international reach. For the occasion, a nine-course tasting menu has been created “four hands,” combining local products with a contemporary and technically refined approach. Ingredients from the PortoBay garden and seafood from Madeira will be creatively explored, reflecting the culinary identity of both chefs.

Jacob Jan Boerma is widely recognized for his outstanding career in the MICHELIN universe. As co-owner of De Leest, he led the restaurant to three MICHELIN stars in 2014, a distinction it maintained until closing in 2019. Throughout his career, he has been involved in several international projects, including The White Room and Fine Fleur, both awarded one MICHELIN star, as well as other concepts across Europe and Asia.

The presence of the Dutch chef in Madeira highlights the destination’s growing relevance on the global gastronomic stage, reinforcing its ability to attract top international talent. The initiative is part of the strategy of Grupo PortoBay to continuously enhance the identity of its restaurants, promoting the exchange of knowledge and the fusion of culinary cultures, always with respect for local products and traditions.

With initiatives like this, Il Gallo d’Oro continues to elevate Madeiran gastronomy, positioning it within an international circuit of excellence.
