The third and final lunch of this year has already been scheduled, dedicated to the theme of Arroz de Cabidela, at O Recante restaurant in Caniçal. It will take place on Saturday, 28 March, between 12:00 and 16:00.
This time, Chef Eusébio Nunes has chosen suckling pig cabidela, after previously opting for chicken and duck. The cabidelas are always prepared based on traditional recipes.
Tables will be shared, in an informal and welcoming atmosphere designed to encourage socialising among friends and families, in keeping with tradition. The lunch costs €25.50 per person.
Cabidela, also known as arroz de cabidela, is a traditional Portuguese dish originating from the Minho region. It is a meat stew, usually made with chicken, hen, duck or suckling pig, cooked in its own blood and seasoned with vinegar, which gives it a distinctive, tangy and intense flavour. It is an old recipe, often served with Carolino rice, making use of offal and different parts of the bird.
These lunches follow a series of previous events dedicated to cozido à portuguesa, where Chef Eusébio Nunes showcased cured meats from various regions of the country. These initiatives are part of his gastronomic journey, marked by a continuous search for knowledge through travels across Portugal and beyond, always with the aim of promoting and celebrating traditional Portuguese cuisine.
