The new cocktails at Three House

Three House has launched a new menu featuring some of the best local products from Madeira and beyond.

The Three House team got together, exchanged ideas, and changed eight of the 12 signature cocktails at the Funchal cocktail bar. The new menu is a commitment to sustainability, combating waste, and promoting regional products.

Some of the cocktails now feature the Christian Cross (present on the Madeira flag) in their descriptions. This indicates that the cocktail contains local products, a new focus for Three House. These include fruits, herbs, barley coffee, corn flour, and Madeira rum.  

An example of the use of regional products is the Papa Maya, a cocktail that includes pickled papaya and its seeds in a mixture that also includes Madeira rum from the William Hinton brand.

An example of sustainability is the San Sebastian pie, a dessert from the restaurant, which is infused and transformed into the Pearish cocktail.

Roasted, earthy, fruity, velvety, aromatic, tropical, or refreshing are some of the notes that Three House cocktails present. “We have a repertoire that includes fresher cocktails,” explains Augusto Ribeiro, bar manager, who points out that they all contain ice, which is handmade and engraved with the Three House symbol. This is the team's interpretation of the space, one of the hottest rooftops in Funchal.

The cocktails are not very colourful, another trademark, nor too caloric, “reflecting a less sugary approach.” The ingredients, says Augusto Ribeiro, are worked more intensely.

The Pearish, based on the San Sebastian Tart, is the best seller on the new menu. Finished with a caramelized tart crust, it can even serve as a kind of dessert for those who don't like very sweet desserts.

The Papa Maya is another best seller. Fresh and sweet, it contrasts with a papaya pickle placed in the glass.

The menu is also organized by the alcohol content of the cocktails. A full circle corresponds to more alcohol. Half a circle means a less alcoholic drink.

Some of the cocktails from the old menu can still be ordered, as well as a range of other drinks, such as gin or whiskey, or a simple beer. Three House is one of the most popular places in Funchal, sought after by locals and visitors alike.

It has DJ entertainment every day and always features jazz performances on Wednesdays. It is associated with the Three House hotel and restaurant, making it possible to combine dinner and drinks in the same program.
