Madeira is preparing to celebrate its gastronomic essence with the dinner “From Ocean to Nature”, taking place at Restaurant Oxalis, in the Hotel Casa Velha do Palheiro, Relais & Châteaux. The event brings together Chef Gonçalo Bota, recommended by the Michelin Guide, and Chef José Diogo Costa, holder of a Michelin Star at the William restaurant in Reid’s Palace, A Belmond Hotel. This is a culinary collaboration designed to pay tribute to Madeira’s rich natural and cultural heritage.
Inspired by the island’s landscapes, the menu proposes “a sensory journey from the depths of the Atlantic Ocean to the serenity of the Palheiro Nature Estate highlands”, according to a press release issued by Casa Velha do Palheiro. The six-course experience — consisting of four savoury dishes, a pre-dessert and a dessert — will be paired with a selection of premium Champagne, carefully chosen “to enhance the dialogue between the freshness of the sea and the natural richness of Madeira.”
Grounded in local produce, sustainability and respect for nature, the dinner reflects the shared philosophy of Relais & Châteaux and Belmond, both of which value timeless hospitality, culinary excellence and a deep connection to place. “This dinner celebrates the essence of Madeira – the meeting of two culinary worlds united by the same respect for the island’s ingredients and traditions,” says Chef Gonçalo Bota. Chef José Diogo Costa adds: “‘From Ocean to Nature’ is more than a menu; it’s a story of origin, of land and sea, and of how the art of cooking transforms nature’s produce into experience.”
The dinner will take place on Friday, 14 November 2025, at 7:00 p.m., at Restaurant Oxalis, in the Hotel Casa Velha do Palheiro. The price is €245 per person, including Champagne pairing.
