The restaurant Galáxia Skyfood will resume its “Estrelas no Galáxia” series on 9 May, at a time of transformation for the venue, now positioned as more open, dynamic and focused on the identity of its cuisine. Resident chef Roberto Barros invites Alexandre Silva for a four-hands dinner marking this new phase.
Chef of LOCO, awarded one Michelin star, Alexandre Silva is part of a generation that has been redefining contemporary Portuguese cuisine. His participation reinforces the intention of Galáxia Skyfood to open its doors to collaborations and new approaches, promoting the sharing of ideas and experimentation.
The wine pairing will be curated by André Ferraz, the restaurant’s sommelier, with a carefully designed selection. The pastry component will be led by Pedro Campas, responsible for pastry across Savoy Signature.
According to Roberto Barros, these encounters are part of the restaurant’s ongoing evolution, allowing the team to test new ideas and deepen its gastronomic approach. Alexandre Silva joins the team for an evening centred on flavour and creative freedom.
The dinner menu includes snacks such as black scabbardfish with fermented banana, cured egg yolk and lovage, and limpet malassada with lime and gaiado ham. This is followed by a bread selection featuring sourdough, bolo do caco and spiced brioche, served with flavoured butters, fleur de sel and olive oil.
For the amuse-bouche, Alexandre Silva presents a tuna tartlet with fermented red cabbage and oscietra caviar, a smoked and aromatic Thai-inspired broth, and a nori tube filled with tuna belly tartare, seasoned with wasabi and ponzu.
The starter features scarlet prawn with curry, head cream and chive oil. In the fish course, Roberto Barros serves trout from Seixal with fennel chawanmushi, caldeirada, roe and passion fruit. The meat course, by Alexandre Silva, includes smoked duck, Jerusalem artichoke, stewed chanterelles, jus and potato soufflé. Dessert, created by Pedro Campas, combines vanilla in different textures: mousse, biscuit and quince paste.
